Greek Salad (Horiatiki)

Ingredients

A traditional Greek salad does not have any lettuce; however, you can add romaine lettuce if desired. Serves 4. 

Feta cheese, 4 oz., crumbled into large chunks or diced into cubes
Red or green pepper - 1, chopped and sliced lengthwise 
English cucumber, 1 large or 4 to 6 small Armenian cucumbers 
- peeled and sliced
Tomatoes, 5 medium sized (heirloom preferred), sliced in quarters 
Kalamata olives – handful, whole or sliced lengthwise
Red onion – small, peeled and thinly sliced 
Dried oregano, 1 teaspoon
Salt
Freshly ground pepper
Red Balsamic vinegar, (preferably from Modena, Italy), ¼ cup
Stavros Olive Company olive oil (any varietal), for drizzling
Head of Romaine lettuce, chopped, dark green outer leaves removed (Optional)

Directions 

  1.  Assemble feta and vegetables in a large bowl.
  2.  Sprinkle with oregano, salt and pepper.
  3.  Drizzle with olive oil and balsamic vinegar. Serve.
